These cookies are packed with fiber from ALL of the ingredients: flaxseeds, chia seeds and oats are all wonderful fiber sources. In case you are tired of the mushy texture of oatmeal, these refined sugar-free cookies are a quick & easy way to switch things up!
Add the wet ingredients to a bowl: mashed banana, egg, peanut butter (or other nut butter of choice).
Mix in the dry ingredients: rolled oats, flaxseeds, chia seeds, cinnamon and a pinch of salt. Maple syrup can be switched up with honey or agave, and you can adjust the amount to your taste. I added raisins for extra sweetness, but if you are not a fan, you can switch them with chocolate chunks.
Bake the cookies in a preheated oven for 8-10 minutes at 180°C (356°F). Check on the cookies frequently, they burn very quickly.
