These refined-sugar free gingerbread cookies will keep you coming back for more, they are very easy to make and give you that festive vibe without being overly sweet.
For this one, I mixed the wet & dry ingredients in the same bowl, but if you want to do it separately, that is of course completely fine :)
Add the melted butter, cane sugar, honey and egg into a bowl and mix. Honey can be swapped out for maple syrup or agave, whatever you have in your pantry.
Mix in (or in a separate bowl at first, your choice) the whole wheat flour, oat flour, baking soda, spices and sea salt. The cookie dough needs to be chilled in the fridge for at least 30 minutes.
Spread out the cookie dough and prepare your cookies, they rise quite a lot, so consider putting them further apart in the baking tray.
Bake in a preheated oven at 350°F/180°C for 8-12 minutes. I recommend not leaving the kitchen at this time, since they burn very quickly.
Wait for the cookies to cool and decorate them as you like.
