Folic Acid Salad with Red Beet, Arugula, Walnuts and Feta

This salad combines sweet roasted beets, peppery arugula, creamy feta, crunchy walnuts, and a drizzle of balsamic. Packed with flavor and nutrition, it’s especially rich in folic acid from the beets, making it a nourishing choice for women who want to improve their fertility.

Ingredients

  • 2 slices of bread (white or whole grain)
  • 2 large eggs
  • 1 tbsp butter or olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, avocado slices, herbs

Instructions

I usually go for precooked red beets, but you can totally boil some yourself. However, it would take you a bit longer to prepare the salad in this case.

Assemble all the ingredients together and add the olive oil, balsamic vinegar and salt. This recipe makes 2 servings, but you can double the recipe for a weekly meal prep and store it in the fridge for 3-4 days.
